A Super Food?

I've recently discovered a new food choice for diabetics that is a really old choice. In many  European and Asian countries Buckwheat is a staple of their diet. You can get buckwheat at any healthfood store and many supermarkets. To cook this "superfood" all I do is get a 160z. box of soup stock (low sodium). Bring the stock to a boil and then add 8oz. of buckwheat. I also add 2 tablespoons of nutritional yeast. http://www.efn.org/~sundance/NutritionalYeast.html  Bring back to a boil and then simmer for 30 minutes.

I cook a bunch of this on the weekend and store it in the refrigerator for a quick and healthy lunch everyday! Just a note on reheating. You should choose the "reheat" function on the microwave and cook about a cup on the "pasta" setting. (1 serving).
